Traditional Deer Scrapple |
Ingredients:4 cups beef bouillon 1 cup corn meal 1 tsp. salt 1 1/2 lbs. chopped deer liver 1/2 lb. chopped deer heart 1 onion, chopped 1/4 lb. margarine 1/2 cup flour 3 Tbsp. margarine
Directions:Bring broth to rapid boil and slowly add corn meal. Stir constantly until it comes to a full boil. Add salt, reduce heat. Cover and cook slowly five to seven minutes. Fry chopped liver, heart & onions in margarine. Stir frequently until meat is even in color. Stir into corn meal and pour into loaf pan. Chill. Slice and roll in flour and fry in margarine until both sides are golden brown. Serves 4.
