So-Cal Quesadillas with Queso Fresco and Avocado |
Ingredients:4 10-inch flour tortillas 8 ounces queso fresco 1 large ripe Hass avocado, pitted, peeled and cubed 1 1/2 cups fresh tomato salsa Canola oil
Directions:1. Coat a stovetop griddle with oil and heat over medium heat until almost smoking. Add 1 tortilla and sprinkle 1/4 of the cheese and a few avocado cubes over half of the tortilla. Fold the tortilla in half and press the edges lightly together. Brown over medium heat for 1 to 2 minutes, then turn the quesadilla and brown the other side until golden, about 1 minute.
2. Remove from the heat and place on a paper towel to cool slightly. Repeat with the remaining tortillas, adding more oil to the griddle as needed. Slice each quesadilla into 4 wedges and serve warm on a platter with a bowl of salsa. PC11B428
