Hearty Chicken & Vegetable Chowder |
Ingredients:1 tablespoon canola oil 1 large onion, minced (about 1 cup) 1 clove garlic, minced 1 can (10 3/4 ounces) Cream of Celery Soup 1 cup nonfat milk 1 cup water 2 medium red potatoes, diced (about 2 cups) 1 large zucchini, diced (about 1 1/2 cups) 1 cup whole kernel corn 2 cups diced cooked chicken 2 tablespoons chopped fresh parsley
Directions:Heat oil in 4-quart saucepan over medium-high heat. Add onion and garlic and cook for 2 minutes, stirring occasionally. Stir in soup, milk and water and heat to a boil. Stir in potatoes, zucchini and corn. Reduce heat to medium-low. Cook for 35 minutes or until potatoes are tender, stirring occasionally. Stir in chicken and parsley and cook until mixture is hot and bubbling.
