Potato Casserole |
Ingredients:2 1/2 lbs. redskin potatoes 1 cup shredded cheese (more if desired) 1/2 lb. crisp, cooked bacon, chopped mayonnaise
Directions:Cube and boil potatoes until almost done (8 min.). Drain. Use just enough mayonnaise to coat potatoes. Stir in cheese and chopped bacon. Pour into a 13x9 casserole dish and bake at 350 degreees for 20-30 minutes or until cheese is crispy around the edges. (I keep cooked bacon in the freezer to cut down on prep time.)
