Zucchini Bread

Ingredients:

3 eggs

1 cup vegetable oil

2  cups brown sugar

2 cups grated zucchini

2 tsps. vanilla

3 cups flour

3 tsps. cinnamon

1 tsp. baking soda

1 tsp. salt

1/2 tsp. baking powder

1/2 cup chopped walnuts

 

Directions:

Combine eggs, oil, sugar, and vanilla. Mix well. Add zucchini and blend. Don’t over stir. Sift together dry ingredients and stir into zucchini batter. Fold in walnuts.

Pour into a greased loaf pan and bake for 1 hour at 325 degrees until done.

Serve hot with margarine.
