Homemade Coconut-Pistachio Granola

Ingredients:

3 cups old-fashioned rolled oats

¾ cup coconut chips or flakes

1 cup unsalted pistachios

½ stick (1/4 cup) Smart Balance® Blended Butter Sticks, melted

¼ cup honey

1/3 cup packed brown sugar

¼ teaspoon cinnamon

½ teaspoon salt

½ teaspoon vanilla

1 cup dried cherries or cranberries (optional)

 

Directions:

Combine oats, coconut and pistachios in a large bowl. In a small bowl, whisk together melted butter, honey, brown sugar, cinnamon, salt and vanilla. Pour mixture over dry ingredients and stir until mixed. Spread granola on two baking sheets. Bake at 300 degrees for 40 minutes or until lightly browned, stirring twice while baking. For clumpier granola, do not stir during final 10 minutes of baking and do not stir until cooled. Mix in dried fruit, if using. Store in an airtight container.

 

Yield: 18 servings; 1/3 cup per serving
