Penne with Tomatoes and Pine Nuts

Ingredients:

1⁄2 cup chopped onion

2 teaspoons finely chopped garlic

1 can (28 ounces each) whole tomatoes with basil, undrained, broken into bite-size pieces

8 ounces dry penne pasta, uncooked

1⁄3 cup shredded Parmesan cheese

1⁄3 cup pine nuts, toasted 

1⁄4 teaspoon kosher salt

2 tablespoons chopped fresh Italian (flat-leaf) parsley 

olive oil no-stick cooking spray

 

Directions:

Lightly spray large skillet with cooking spray; heat over medium heat. When hot, add onion and garlic; cook 2 to 3 minutes or until onion is lightly browned and tender. Add un- drained tomatoes; reduce heat and simmer 20 to 25 minutes or until slightly thickened. Mean- while, prepare pasta according to package directions. Drain and add pasta to tomato mix- ture. Stir in cheese, pine nuts and salt. Sprinkle with parsley and serve.

 

Prep Time: 40 minutes 

Makes: 4 servings (about 1 1⁄2 cups each)
