Vanilla Cake With Chocolate Frosting |
For the cake:2 cups sugar 1 3/4 cups whole wheat pastry flour 1 1/2 teaspoons baking powder 1 1/2 teaspoons baking soda 1 teaspoon sea salt 2 eggs 1 cup whole milk 1/2 cup vegetable oil 2 teaspoons vanilla extract 1 cup boiling water
Cake Directions:Preheat oven to 350 F. Combine the dry ingredients in a mixing bowl. Add eggs, milk, oil, and vanilla and mix until well blended. Stir in boiling water (batter will be thin). Pour into a greased and floured pan. Bake between 35 and 40 minutes or until a toothpick inserted into the center of the cake comes out clean.
For the frosting:1 stick butter 2/3 cup cocoa 3 cups powdered sugar 1/3 cup milk 1 teaspoon vanilla extract
Frosting Directions:Put cocoa powder in a mixing bowl. Melt butter and pour into the powder. Alternately add small amounts of powdered sugar and milk. Beat on medium speed until the mixture is at a good consistency to spread. Stir in the vanilla. Use to frost cooled cake.
