White Potato Pie

Ingredients:

3 white potatoes, cooked and mashed

2/3 cup butter

4 eggs, beaten

1 cup sugar

1/8 tsp. salt

1/8 tsp. nutmeg

1/2 tsp. baking powder

1/2 cup milk

2 Tbsp. lemon extract

1/2 cup whipping cream

 

Directions:

Combine potatoes, butter, sugar and salt. Mix well. Slowly add the rest of the ingredients. Add beaten eggs last. Pour into an unbaked pie shell. Bake 50 minutes at 350 degrees or until knife cuts cleanly. Serve with Cool Whip, if desired, when pie is cooled.
