Hearthside Sandwich Loaf

This is great served with soup on a cold winter’s night.

 

Directions:

1 short, wide Italian bread loaf - approx. 8” long

1/2 cup butter, softened

1/3 cup minced onion

3 Tbsp. mustard

1 Tbsp. poppy seeds

2 tsps. lemon juice

Tabasco sauce

12 slices Swiss cheese

4-6 slices bacon

 

Directions:

About 45 minutes before serving: Preheat oven to 350 degrees.

Make 6 diagonal cuts into bread, slicing ALMOST through to bottom. Blend butter, onion, mustard, poppy seeds, lemon juice and a couple dashes of Tabasco in bowl. Spread onto cut surfaces of bread within each “slice”.

 

Place 2 slices of cheese in each cut. Lay raw bacon in diagonal rows on top. Bake on open sheet of foil for 30 minutes or until bacon is done. Let cool 5 minutes before cutting.
