Pretty Much The Best Fish Fry Platter Around |
Fish Ingredients:Boneless, skinless fresh or saltwater filets Pancake flour (any kind you like) Salt & pepper Cornmeal for extra crunch (optional) Oil for frying
Method:Place pancake flour (enough to cover amount of filets) into a 1 gal. plastic bag. Add salt, pepper & cornmeal (to taste). Toss in filets, shake well to coat filets, shake off excess flour, place in hot oil (350 degrees), cook until golden & floating. Note: This also works well on chicken.
Sweet Potato French Fries:Large sweet potatoes (as needed) cut into “French fry” strips. Fry in hot oil (350 degree) till floating. For crispier fries, place in hot oil a second time, being careful not to burn. Salt & pepper or French fry seasoning to taste.
Hush Puppies:Using the left over ingredients in the plastic bag, add enough liquid (water, beer, milk) to make a slurry/paste. Cut a small hole in the point of the bag, then squeeze dollops into hot oil, (350 degrees), cook until done. Drain on paper towels, sprinkle with powdered sugar, serve on platters, dig in!!
