Chocolate Oat Nut Cake |
Ingredients:1 1/2 cups flour 1/2 tsp. salt 1 tsp. baking soda 2 Tbsp. cocoa powder 1 cup quick cooking old-fashioned rolled oats (not instant) 1 1/2 cups boiling water 1/2 cup butter or margarine 1 cup packed brown sugar 1 cup white granulated sugar 3 eggs 1 pkg. (12 oz.) semi-sweet chocolate pieces 3/4 cup chopped nuts confectioners sugar (optional)
Directions:Stir flour, salt, soda and cocoa together; set aside. Put oatmeal in bowl and stir in boiling water; let stand 10 minutes. Stir in butter, brown and white sugars. Add eggs, mix well. Add dry ingredients. Fold in 1/2 chocolate chips and spread in a greased and floured 13x9x2 pan. Sprinkle remaining chocolate chips and nuts on top. Bake 45 minutes in 350 degree oven. Cool in pan. Sprinkle confectioner’s sugar over cake and serve in squares.
