Versatile Volcano - Low Sugar, Low Fat

Ingredients:

1 pkg. cherry sugar free Jello

1 pkg. sugar free vanilla instant pudding

1 8 oz. container Cool Whip, thawed (lite or sugar free)

1 1/2 cups boiling water

1 can no sugar added/lite cherry pie filling

 

Directions:

Mix Jello well into boiling water. Pour into 2 quart casserole dish or mixing bowl (flatter bowls work best) and chill 20 minutes. Whisk in vanilla pudding until mix thickens. Whisk in Cool Whip. Line a bowl or dish with plastic wrap. Pour the mix into bowl and chill for at least 4 hours - overnight is best.

Lay a large plate over the top of mixing bowl and flip mix out - gently remove plastic. Pour cherries over the top.

 

Option 2: Use 2 cups chopped/sliced fresh fruit instead of cherry pie filling. Match Jello to the fruit (peaches get peach Jello; strawberries gets strawberry Jello; canned mandarin oranges get orange Jello, etc.) Using a larger, flatter bowl (glass bowl works  great) - line it with plastic and layer fruit in bottom. Pour mix over that, and gently push mix into fruit to ke sure all pieces are covered (you can see through the sides and bottom of the glass bowl).

 

Note: Pineapple does not work in this recipe - the acid keeps the base mix from setting up.
