Pumpkin Pie Dessert

Crust:

1 box spice or yellow cake mix (save 1 cup for topping)

1/2 cup melted butter

1 egg

 

Combine above ingredients, beat at low speed for 1-2 minutes. Spread in bottom of 9”x13” buttered pan. Set aside.

 

Filling: 

1/2 cup brown sugar, firmly packed

2 tsp. pumpkin pie spice

15 oz. solid pack canned pumpkin

2 eggs

2/3 cup milk

 

Beat at low speed until smooth. Pour over crust.

 

Topping:

1 cup reserved cake mix

1/4 cup brown sugar

1/4 cup soft butter

1/2 cup chopped pecans

 

Stir until crumbly. Sprinkle over filling. Bake at 350 degrees for  45-50 minutes or until inserted knife comes out clean. Cool 15 minutes. Approx. 12 servings.
