Mock Crab Cakes

Ingredients:

2 1/2 cups grated zucchini (zucchini needs to be about 12” long x 2 1/2”diam.)

1 cup seasoned bread crumbs (I use Arnold Stuffing Mix and put into the food processer until it’s crumbs)

1/4 cup Eggbeaters

2 Tbsp. minced onion

2 Tbsp. margarine (I Can’t Believe It’s Not Butter Light)

1 tsp. Old Bay

 

Directions:

Line a colander with paper towels and let the zucchini sit in the paper towels for 10 minutes or so. Put paper towels on top and squeeze moisture through. The key to this recipe is having the zucchini as dry as possible. You can also put the zuke into a zip lock bag with several paper towels and put in the fridge for several hours.

Mix well all of the ingredients.

Spray a frying pan with Pam. Divide into 8 cakes and brown on medium-high heat. Watch - they will burn if the fire is too high. The center of the cake will not get solid, but will get VERY hot.

 

Using the above ingredients, each serving is 44 calories, 1.6 grams fat and .5 gram fiber for 1 point.

 

Even non-vegetable eaters love these!
